"Dear Ursula: I just wanted to thank you for the wonderful meal you catered for our brunch today. The African-American Parents Advisory Committee (AAPAC) is a group of adoptive parents, all of whom adopted their children through Spence-Chapin Services to Families and Children, a private, not-for-profit adoption agency headquartered in New York City. AAPAC hosts this brunch every year in October to celebrate our families and to attract new members.

Your meal of baked chicken, macaroni and cheese, candied yams, steamed veggies, fruit salad and Ursula's Cake was stupendous! People who don't normally eat much were coming back for seconds. Children and adults alike were all delighted at the luscious meal. ...and you know how rare it is for children and their parents to enjoy the same food...
